  • 1 cup shredded cheddar cheese

  • ¼ tsp black pepper
  • 1 cup spinach, chopped
  • ½ cup ½ cup red bell pepper, diced

Method
 

  1. Preheat and Prep. Preheat oven to 300°F (150°C). Place a baking dish filled with 1 inch of hot water on the bottom oven rack. Grease a 12-cup muffin tin thoroughly.
  2. Blend the Base. In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until completely smooth and pale yellow.
  3. Mix and Fill. Stir in the chopped spinach, red pepper, and shredded cheese by hand. Distribute the mixture evenly among the 12 muffin cups.
  4. Bake Gently. Place the tin on the middle rack (above the water pan). Bake for 22-25 minutes, or until the centers are just set and don't jiggle.
  5. Rest and Serve. Remove from oven and let sit for 5 minutes. Use a silicone spatula to gently pop them out.
