- 4 cups sweet corn kernels

- 1/4 cup sour cream
- 1 tbsp fresh lime juice
- 1 tsp chili powder
- 1/2 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
For extra heat, add diced jalapeños.
Cotija cheese can be added for a Mexican street corn flavor.
This salad tastes even better after chilling for a few hours.
