Ingredients
  

  • 3 cups cooked white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (10.5 oz) 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 2 cups shredded cheddar cheese, divided
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley

Method
 

  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks

  3. Add the onion, bell pepper, and garlic. Cook for 3–4 minutes until softened.
  4. Stir in the diced tomatoes with green chilies, chili powder, paprika, cumin, salt, and black pepper
  5. Reduce the heat and mix in the cream of chicken soup, sour cream, and 1 cup of shredded cheddar cheese.
  6. Add the cooked rice and stir until everything is evenly combined.
  7. Transfer the mixture to the prepared baking dish and spread evenly.
  8. Sprinkle the remaining cheddar cheese over the top.
  9. Bake uncovered for 25–30 minutes, or until hot and bubbly and the cheese is melted.
  10. Remove from the oven and let rest for 5 minutes.
